DIY Seafood Platter

Last updated: 10 Apr 2026
Over the past decade, the trend of cooking at home—along with the growing popularity of “grazing boards”—has become widespread around the world, including in Thailand. People are paying more attention to food presentation, making dishes visually appealing for serving and photography. As a result, seafood has become one of the most popular choices, especially among home-cooking enthusiasts.

Seafood platters first gained popularity in France, where they are typically served as an appetizer featuring a variety of seafood such as oysters, mussels, clams, scallops, crab, prawns, lobster, and more. They are usually garnished with lemon slices and parsley, and served on ice. In French, this dish is known as a “Plateau de fruits de mer.”

The idea of making a seafood platter at home comes from the desire to create a memorable “experience,” rather than simply buying ready-made food. You can choose your preferred types of seafood, determine the portion size, and select your preferred cooking methods—whether grilled, roasted, or boiled—then pair everything with homemade dipping sauces.

The key to a great seafood platter starts with the quality of the ingredients. Seafood experts from the Monterey Bay Aquarium’s Seafood Watch Program recommend choosing fresh seafood from environmentally responsible sources. Freshness can be assessed by checking the color, smell, and texture of the seafood. It should then be cleaned properly before cooking and arranged attractively on the platter.

A well-balanced seafood platter should include a variety of seafood to create harmony in both flavor and presentation. Popular choices include salmon, shrimp, oysters, crab, lobster, mussels, clams, squid, and scallops. Combining these ingredients thoughtfully adds depth of flavor and visual appeal, while the variety of colors helps stimulate the appetite.

In addition to the main ingredients, sauces and dips are essential components that complete the seafood platter. It is best to prepare several types of sauces to allow guests to mix and match according to their taste. For example, cocktail sauce pairs well with shrimp, mignonette complements oysters, garlic aioli adds richness, and Thai seafood dipping sauce offers a bold and spicy local touch.

Ideas for a More Attractive DIY Seafood Platter

  • Use a large stone plate, wooden board, or stainless-steel tray. The tray should be slightly larger than the amount of seafood to create a more elegant and spacious presentation.Prepare a layer of crushed ice
  • Spread a thin layer of coarse crushed ice across the tray. You can sprinkle coarse sea salt over the ice to slow down melting.
  • Place the largest seafood items, such as lobster or large crab, in the center or at the back to create height and structure. Then arrange shrimp, squid, and shellfish around them in separate groups rather than mixing everything together.
  • Include lemon halves, fresh parsley, mint leaves, or edible flowers between the seafood groups to brighten the platter and clearly separate each category.

Food Safety Tips for Home Seafood Platters

When preparing a seafood platter at home, food safety should always come first. Wash seafood thoroughly, pat it dry, and store it at the proper temperature to reduce the risk of bacteria and contamination.

If using frozen seafood, thaw it in the refrigerator in advance. Avoid thawing with hot water or in the microwave, as this can reduce the quality of the seafood and increase health risks.

It is also important to cook seafood thoroughly—especially shellfish, crab, and shrimp, which are more likely to carry harmful bacteria. Proper cooking not only preserves great flavor but also ensures a safe and enjoyable dining experience for everyone.
