Sweetened condensed milk is a product of necessity from the 19th century, when modern refrigeration was unavailable and milk spoiled easily during long journeys.
In 1853, American inventor Gail Borden sought to solve this problem after witnessing children die from spoiled milk aboard ships. He envisioned a way to make milk shelf-stable without refrigeration.
A Brilliant Invention
Borden developed a method to evaporate water from milk and add sugar to preserve it. The result was a thick, sweet, creamy liquid that could be stored for monthsrevolutionizing food storage and distribution.
He patented the process and launched the Borden Dairy Company in 1857. During the American Civil War, condensed milk became essential for soldiers who needed portable, long-lasting nutrition.
The Eagle Brand and Commercial Success
In 1864, Borden opened the New York Milk Condensery in Brewster, New York. Branded under the Eagle label, it became the largest and most advanced condensed milk factory of its timeand a symbol of success in food innovation.
The Global Journey Especially Across Southeast Asia
By the late 19th century, sweetened condensed milk spread worldwideespecially to tropical regions like Southeast Asia where refrigeration was scarce.
- In Vietnam, it became essential in iced coffee (cà phê sữa đá)
- In Thailand, it arrived during King Rama Vs reign with Western culinary influences and was later adopted in traditional Thai desserts like sangkhaya and golden sweets
