COVAP

A Cooperative Born from the Land

COVAP, or Cooperativa Ganadera del Valle de los Pedroches, was founded in 1959 in the fertile valley of Valle de los Pedroches, located in the Andalusian region of Spain. It began as a collective initiative by local farmers and livestock breeders who aimed to elevate the quality and reputation of agricultural products in the region. What started with a focus on dairy quickly grew into something far greater.

From Milk to Mastering the Art of Ibérico

While COVAP initially specialized in dairy production, the cooperative soon realized the potential of its local environmenta land perfectly suited for raising Iberian pigs, a native breed of the Iberian Peninsula renowned for its exceptional meat quality and flavor.

The Ibérico Pig A Breed Unlike Any Other

COVAP works exclusively with purebred Iberian pigs, carefully selected for their genetics, health, and adaptability to a natural environment. These pigs are raised in the Dehesa, a unique Mediterranean pastureland filled with ancient oak trees that drop acorns (bellotas), a key element of the pigs diet.

The Dehesa system allows the pigs to roam freely, exercise, and forage, resulting in meat that is not only rich in flavor but also high in quality fat, with an ideal marbling that sets it apart from standard pork.

COVAP produces different grades of Jamón Ibérico, including:

  • Jamón Ibérico de Bellota considered the highest quality, from pigs fed predominantly on acorns during the montanera season.

Every step of the processfrom pig selection to curingis carried out with precision. The hams are salted, dried, and cured naturally over months or even years, under strict quality control. This slow process is what gives the final product its signature aroma, delicate texture, and deep umami flavor.

COVAPs commitment to authenticity and quality has earned the brand recognition under Spains Denominación de Origen (DO)a prestigious certification protecting both the origin and the process of production. Additionally, their hams have been awarded:

  • The Superior Taste Award from 2019 to 2024
  • The Diamond Taste Award, reserved for products receiving the highest marks from expert panels over a decade
