Kirschwasser, or simply Kirsch, is a clear cherry brandy made from Morello cherries, originating in Germanys Black Forest. Dating back to the 15th16th centuries, it began as a humble countryside beverage before gaining popularity among nobles and spreading across Europe.

A Name that Means Cherry Water

The word Kirschwasser is German :

  • Kirsch = Cherry
  • Wasser = Water

It refers to the clear, colorless spirit distilled purely from cherries without added sugar or artificial flavoring.

Traditional Distillation

Authentic Kirschwasser involves :

  • Fermenting whole Morello cherries, including pits
  • Natural fermentation without added yeast
  • Double pot-still distillation:

                   Rauhbrand (first run)
                   Feinbrand (second run) Only the heart is kept

  • Aging in oak barrels for at least 3 years

**The result is a crystal-clear brandy with refined cherry aroma and 4045% alcohol content.
