What is Sachertorte?

Sachertorte is a luxurious chocolate cake that originated in Vienna, Austria. It was first created by 16-year-old apprentice Franz Sacher in the court of Prince Metternich. The cake features a dense, moist chocolate sponge layered with tart apricot jam and coated with a glossy, rich chocolate glaze. Traditionally, it is served with unsweetened whipped cream.

History of Sachertorte

The story began in 1832 when Prince Metternich requested a special dessert for his guests, but his head chef fell ill unexpectedly. Young Franz Sacher was tasked with creating a new cake. He invented a chocolate cake filled with apricot jam and coated with rich chocolate, which was well received and named Sachertorte after him.

Recipe Development and Popularity

In 1876, Franzs son Eduard Sacher refined the recipe and introduced the cake at the Hotel Sacher Wien. The cake quickly became a symbol of Viennese culture and attracted tourists from around the world.

Legal Disputes and Recipe Variations

In 1938, a legal dispute arose between Hotel Sacher and Demel bakery over the cakes ownership. The case lasted until 1963, when the court granted Hotel Sacher the rights to the Original Sachertorte, while Demel was allowed to produce a slightly different version, notably differing in the placement of the apricot jam layer.

Cultural Significance and Today

Sachertorte has become Austrias national cake, with December 5th designated as Sachertorte Day. Tourists visiting Vienna often stop by Hotel Sacher Wien to taste the original. Today, Sachertorte is sold worldwide, but the original recipe remains a closely guarded secret of the hotel.
