Under these conditions, the water in the fruit changes directly from a solid (ice) to a gas (Sublimation), a process that helps preserve the fruit's cellular structure and nutrients. This method can remove up to 98% of the moisture.

This freeze-drying technique effectively removes water while retaining almost all of the nutrients, with up to 90% of vitamins and minerals preserved. It is also low in calories, a good source of fiber, and an excellent source of antioxidants.
