The Fascinating Origin of Burrata

The origin story of Burrata is as complex and marvelous as other cheese varieties. It emerged in the town of Andria, Puglia region of Italy, during the 1920s, at the farm of the Bianchino brothers (Lorenzo and Vincenzo). The initial idea behind making Burrata stemmed from the Bianchino brothers' desire to create a unique and distinct cheese. They invented Burrata cheese by taking leftover buffalo mozzarella from production, forming it into a balloon-like pouch, filling the inside with Stracciatella cheese, and then tying the pouch shut. This created a fresh, semi-soft cheese ready to be served immediately.

This concept not only resulted in a new type of cheese but also helped reduce food waste from mozzarella production. Today, many Burrata cheese producers outside Italy have started using cow's milk instead.

Important Notes on Consuming Burrata

Generally, Burrata should be served at room temperature and consumed within 2-3 days of being freshly made. As a fresh cheese, it cannot be stored for as long as other cheese types. The longer it's kept, the harder the cream becomes, and it may develop a sour taste. Normally, fresh Burrata should not be sour; if it tastes sour, it means it has spoiled.

Pairing Burrata with Diverse Dishes

Burrata is often served as an appetizer because it harmonizes well with various flavors that stimulate the palate and appetite, such as tomatoes, basil, olive oil, and balsamic vinegar, seasoned with salt and freshly ground black pepper. It is commonly served with salads, pizzas, and pastas.

When paired with a salad, the creamy interior of Burrata enhances the crispness of green leafy vegetables, making them even more delicious. On pizza, the creaminess adds richness to the toppings. In a pasta dish, the cream cheese melts into the sauce, creating a richer, more mellow flavor.
